Snobby Joes
Snobby Joes.. get it? I love the name, but I cannot take credit because Post Punk Kitchen deserves it for such awesomeness. While the name came from PPK, the recipe is courtesy of Naturally Ella. We added 1/3 cup of spicy bbq sauce, a little more ketchup and Brigham's homemade pickles. Amazing. Not the most photogenic, but the flavor was spot on. Each time we've made these delicious wonders, we cannot stop at one sandwich. Homegrown green beans sauteed, then briefly steamed and tossed with balsamic vinegar pair perfectly with the snobbiness. We're going to try to swap the bulgar with quinoa next time to up the protein. I'll let you know what we think!
