Weigh-in

When we started the whole foods, plant based diet I wasn't really sure if it would impact our weight.  I thought our diet was already more healthy than not.  I also thought it sure would be nice to lose a few pounds.  We've both gained 15 pounds or so since we moved back to Ohio.  Some people shed weight with stress, but not us!  I'm really happy to report that Brigham has lost 10 pounds since  May 3rd.  10 pounds in 7 weeks!  I've been tracking my calories and increasing exercise, so I have lost 15 pounds since February 1st.  5 of those pounds have been since we transitioned to the whole foods, plant based diet.  I am definitely growing more curious about the impact of the diet on our cholesterol and blood pressure numbers, but will have to be patient until August.  I've got a few more recipes to share in the coming week including red curry lentils and chana saag.  Stay tuned!
