Spicy buffalo!

When I told my brother we were transitioning to a whole food, plant strong diet, he said he couldn't do it because of his love of chicken wings.  And I totally get that.  But I have to say, I love buffalo cauliflower a lot more than chicken wings!  Same flavor, but no bones, no grease, and minimal cleanup.  We've been following this recipe from the Hot for Food blog and it's delicious.  We use a little bit less water so the breading is a bit thicker, but otherwise, this recipe is one we would probably make every single night if we could.  Brigham made an awesome kale and red cabbage slaw to go with it and it's the perfect compliment of spicy and tangy.

A very unscientific nutritional comparison: if we ate the about 4 chicken wings, it would be about 400 or so calories, 24 grams of fat, 108 mg of cholesterol, 32 grams of protein, and 0 grams of fiber.  A cup of buffalo cauliflower bites is 129 calories, 1 gram of fat, 0 grams of cholesterol, 7 grams of protein, and 4 grams of fiber.  Less mess and more nutritionally dense!  We haven't found a good way to reheat the leftovers so now we just make sure there are no leftovers.  Give them a try and let me know what you think!
