Nori Rolls


Nori rolls have been a favorite summer dish for years, but we used to include smoked salmon.  These days we're including sauteed tofu that has been marinated in Bragg's liquid aminos and they are just as delicious.  A super quick meal to put together, nori rolls are perfect for hot summer evenings when too much cooking sounds like too much!  Start with cooking a cup of sushi rice and marinate thinly sliced strips of extra firm tofu.  Slice whatever vegetables you have on hand into thin strips.  We've been using cucumber, red onion, jalapenos, carrots, and bell peppers.  Saute the marinated tofu while the rice is cooking and assemble the rolls once the tofu is ready.  We have a bamboo rolling mat that makes assembling the rolls a lot easier.  Serve with whatever dipping sauce sounds good to you.  We've been using Bragg's liquid aminos and a little bit of wasabi.  Wasabi bonus: clear sinuses!

I've had a few people ask me if I'm getting enough protein.  The short answer is yes, most days.  I've been tracking my nutrition (and steps!) for about a year and was surprised to notice that when I was eating meat and dairy, I was getting about the same amount of protein as I am eating a whole foods, plant-based diet.  I'm shooting for at least 50 grams a day and have hit that goal every day but one in the last week.  Including ground flax, nutritional yeast, quinoa, steel-cut oats, and protein-rich vegetables like cauliflower, peas, beans, and lentils every day really makes that goal attainable.  Every little bit adds up!
