New-dles

New-dles!  Buckwheat soba noodles were new to us and a definite new recipe winner.  The recipe is from the Prevent and Reverse Heart Disease  cookbook and the Esselstyn's flavor combinations do not disappoint.  Follow the link to check out the Esselsytn's site and free sample recipes!

The Pacific Rim soba noodles recipe called for collard greens which we didn't have, but we did have a large bag of frozen kale which we steamed in a couple inches of water.  The noodles were tossed with a yellow and orange bell pepper, green onions, and half a chopped beet and several carrots.  The sauce was a simple one: rice wine vinegar, bragg's liquid aminos, maple syrup and a small clove of minced garlic.  We've been growing herbs in our garden and topped our noodle salad with freshly picked parsley, dill and basil.  Did I mention it was delicious?  Like wow I'm actually really glad there's at least 3-4 more servings delicious!
